No I don't believe so. When I've taken advantage of similar promos, the discount comes off the transaction at the time you pay. So in this case after you scan the ShopBack Pay QR code and apply the promo, the $5 should immediately come off your total (assuming you've spent at least $8)
Should be noted only 39 stores are valid. Quick google search says there are over 1000 stores in Australia.

It's on Shopback "See all outlets" can confirm only 39 stores- seems like most are in Sydney

I've had a lot of issues with Subway "offers" in the past. Get to the store and "we don't do that offer here" type of stuff.
