If you need to ask then chances are you won't need one. Its for large houses with lots of devices that talk to each other over wifi or you have a in house media server you want to stream movies to lots of devices. A good router + maybe a wifi repeater if you have dead spots is enough for most households.

I'd argue a mesh system is much better than a wifi repeater. And I'd also argue a lot of people that don't understand what it does could definitely make great use of it

I had a TP-Link VR2800 which was struggling to support my Wi-Fi needs, it was reaching out to the shed so i added an RE205 extender which solved the shed problem but I still had a problem of which i didn't realise was caused by the router.
When i tried to play music everywhere through my echo devices it would only play through some.
About this time last year I picked up a TP-Link AX90 router for $268 which fixed my Echo problem as well as offering a mesh system

It allows you to have the same wifi capability, including signal strength, around the house without having to switch wifi networks (amongst many other features).
For example, you may have your NBN router in one room but poor to no Internet signal in another. Plug one of these into the router and the others around the home and in many cases unless you have the same wifi hotspot signal strength throughout (unless you have strong interference i.e. other electrical devices, faraday like walls or very long distances).
In the case of a family relative, their NBN box is in the theatre room and the wifi signal could only travel so far as the next room kitchen. Now they can get a signal from their outside shed as well as their home office three rooms down the hall. Their iPhone, iPad, TV Internet applications all load faster as well.
Many are relatively easy to setup. For example, the one I use is simply plug in via Ethernet cable to the back of the NBN box, download and open an app on an iPhone and confirm the original wifi network name, then plug in the rest around the house and it's done.

Faster wifi speeds locally. This may not necessarily feel like an upgrade though, it depends what you do on your local network, and since you are a self proclaimed tech illiterate, i'd say it wouldn't do a lot for you.

I'm not tech illiterate and run the m5 mesh myself. I do a fair bit locally, smart devices and transferring large files from device to device. The M5 mesh handles it well enough for my needs, so I'm keeping my $299 + delivery.

For me the step to wifi 6 meant I could stream a Bluray rip to a Firestick 4k max (also wifi 6) in my projector without stutters.

Saw a Deco X50 Pro, but why is the "Pro" edition only has 2 LAN ports? anyone knows the difference?
The X50 Pro has 2x 2.5gb ports, this would only really be usefull for transfering data locally between 2 PC's via ethernet since our internet maxes at 1000/50
Yeah for now the max is 1000/400 for nbn FTTP. nbn are proposing 2000/200 for FTTP and 2000/100 for HFC.

Approximately zero consumer gear supports 10Gb - this would be a pointless move.
At least with 2.5Gb, there are various PCs, NAS, and WiFi Access Points that have 2.5Gb Ethernet onboard.

If your shed has electricity then you could use a ethernet over power connection https://www.amazon.com.au/TP-Link-TL-WPA4220KIT-300Mbit-Ethe… . These sometimes work well and sometimes not well, it all depends on wiring and circuit set up etc and you wont know until you plug it in
You can try a mesh system. However 25m is going to be a bit iffy; they recommend 15m max for 'best' outcome (ie distance between each mesh unit); I dont know how well they work at 25m. You will also need power in the shed to run the mesh system. This particular mesh (M6) is likely overkill unless you are streaming HD videos to the shed, if you just want wifi on the phone then get a cheaper ('slower') option, like the M5.
Or you can buy a long distance router/modem. These are usually pretty expensive but there are cheaper options that might suit eg Reyee RG-E5

Yes to router, I am FTTP and just plugged straight into fibre box and it worked it all out.
No experience with VPN but can see the options there.

Yeah you can. There is three Gigabit ethernet ports per Deco X50. On the TP-Link overview page it says;

Yes to seperate network for IoT, can limit to only 2.4GHz and tell the system which node to prioritise connection to, has seperate IP table, I don't have much experiences with VLAN sorry.
Parental controls seem useful, however I haven't used as my kids are all locked down at device level.
