      • How do these compare to this deals set? Is the difference the chefs knife having fluting + a small chefs knive vs vegetable knife?

      • Agreed the bow knife is far more useful in this set and definitely worth the extra $20, the only thing missing here is a fillet knife if you don't plan to cut through large bone then you have all you need !

      We have a Yaxall,

      Compared to the Furi knife we had before it holds it's edge extremely well. The Furi knife would lose it's edge much quicker in comparison to the Yaxall.

      We treated both knives the same, never in the dishwasher, always hand washed, always stored in their box and always cut on a wooden chopping board.

      I think the question with knives is more about how prepared are you to look after them? If you are not prepared to treat them well and you chuck them in the knife draw, cut on glass cutting boards and wash in the dishwasher. Just go buy a serrated knife because you're just going to ruin any good knife you buy.

      I'd be keen to buy one as my own pairing knife.

  • I have Grandsharp Damascus knives (63 layers with VG-10 core made with Japanese steel) made in China and they are superior to Global which I also have. The marketing machine has worked well with a very very popupar cooking show (that I won't mention). Global is a little softer and dulls quicker than the VG-10 grade steel. BTW, it helps to have a diamond knife sharpening stones to sharpen these VG-10 knives a bit quicker as they are pretty hard 62+ on the Rockwell Hardeness scale.

    • Very unscientific test; he basically just tested the edge geometry and how well they were sharpened.

      I can sharpen the Cutco to out cut the Global in that test, but it would be a pain in the arse and not worth the effort.

  • I've been using these for like 10 years+ and they're okay, but I really like the Japanese cooking knives you get from the ninja master in the narrow streets of Osaka. A lot of them are made for Japanese cooking but still work great for other purposes!

  • Question from a total knife noob: How do you clean these? (Apologies in advance if it's a dumb question).

    Background: I am lazy so I much prefer to chuck everything in the dishwasher, knives in the cutlery rack with everything else, but I assume that's not recommended with precision items like these. Dish-washing liquid and hot water?

    I also almost never sharpen my knives, and when I do I just use one of the those wooden block built-in sharpeners. And for most food prep I use the Daiso $2.80 knives (27.5 cm kitchen knife with holes). Obviously my knives get kind of blunt after while, so I just buy a new one every 9 months.

    So I'm probably committing every single knife faux-pas possible! :-)

    But this deal seems way fancier that we need.

    I guess I'm wondering if there's a better way, if possible without lots of faffing about or lots of extra cost? Or is the simplest & most economical to just sharpen the Daiso knives every few months? If so, how? First few sharpening stones on Amazon were ~$30, which seems a fair bit.

    TL;DR: Open to ideas or suggestions for improving domestic kitchen knife usage, with preference for low-cost and convenient-cleaning.
