Going up da Tower? Online price is worth checking vs turning up. Yankee cards accepted.
Vietnam: No need to Dong the dogs before eating them. They seem to taste better paid by cash.

Macquarie debit card. Also fx-fee free and does not suffer from Wise's lowly $350/month withdrawal limit. I used mine traveling across central Europe and withdrew in various currencies with no issues.
Dubai: I spent 2 days in Abu Dhabi recently and paid by card 100%. Hotels, Uber/Careem, museums and even restaurants. It's been a while since my last visit to Dubai but it should be the same, if not better. Withdraw some cash if you plan to go to smaller shops away from the center but otherwise everything central to the Burj Khalifa/Dubai mall will accept cards.
Vietnam: 100% you will need cash. If you end up bringing Wise, you will quickly hit that cash withdrawal ceiling and start paying additional fees to Wise.

For Vietnam, I took a Wise card and AUD. I only used the AUD (card was a backup) and converted it at a gold shop with reputable rates. They still very much use cash. Grab (Uber alternative) was linked to my Wise card though with some VND on it.

As for AUD to VND, you can change at gold shops or money changers at airports in Vietnam (Clean/ new and big notes for better exchange rates).- 1

Dubai was very much a cash society. I think for a lot of the smaller shops it still is.
The airport would accept cards and the larger shops but to get the real bargains you need cash.- 0
