Currently at the lowest price I've seen on Amazon AU.

I was originally going to get this before Christmas, when it was selling for around $105, then it dropped to ~$95 but sold out soon afterwards. Since Boxing Day until yesterday, it was around $150, sometimes with an extra $10-$15 for delivery. But today? $90.79. Was $91.77 a couple of days ago but Bogstation mentioned it was a cheaper price now.

How does it differ from other knives?

  • Well according to Global Kitchen Japan where they're selling it for $133 + delivery, it has "32 layers of different steels" which makes it a 'true' damascus vs ones with etched or lasered on designs. In before someone tells me that it's not from the Damascus region and therefore can't be true damascus. I get it, I'm just saying it's got 32 layers of steel.

  • Okawarishoukai says it uses VG-10 steel as well.

I saw the Fujitora Saku Gyuto on backorder, and thought this was a good alternative for those that like the aesthetics - irrespective of whether it's functionally the same or not, or want it delivered sooner.

  • I have this Gyuto and their Santoku. Both very sharp but the Gyuto has a finer edge and chips quite easily.

      • I'd say $16.73 worse, but at this level toss a coin.

    • I have the fujitora and it's a great knife. The handle is holding up well so far, with about 2yr of almost daily use, but I suspect the handle will eventually crack around the rivets and need replacing.
      Both if these knives are great and for all intents and purposes are as good of a chef knife as you will ever need, provided you take care of them.
      One thing I dislike about stainless knives is that they don't seem to sharpen as easily as high carbon ones, so there's that (at least that's been my experience).
      Edit: I think the handle is a bit nicer on the kai, so if you think that's worth the extra $$ then I guess it's worth it

  • Are these expensive knives worth getting if we don’t have a good sharpening technique/routine?

    • I think so. But don't just use any old sharpener. I was recommended something like this Ceramic Water Sharpener. It'll probably get you like 80% the way to a whetstone.

      • Those ceramic water wheel sharpeners are great. So much easier than a whetstone and 80% is more than good enough for me. It takes only a minute or two per knife also.

      • I have a sharpener like this, but I found annoyingly that the plastic guides were rubbing and marking my knives. Ie, I have a mark on my knives 1cm away from the edge where the plastic rubs against the knife, parallel to the edge. Is this because my knives are cheap, or is it user error?

        • I have the same sharpener linked to and you should not be touching the plastic part with the knife. The blade should be 90* to the sharpener, riding half way ontop the ceramic wheels at an angle, not fully inside them. The knife should be centered in the plastic guides.

    • I just pay someone every couple of years to sharpen all my knives. Come back way sharper than I could do.
