    Loss leader = promotion cost.

    Most people aren't going in just to buy beans or plums; they buy other produce which have the margins. Heck, most will buy smaller amounts of beans/plums, which might have the margins.

    They make (or not make) money on the whole store, not on particular formats of 2 items, over the whole year (or even longer), not one day.


    One of my locals sometimes has boxes of corn $10 (I picked up one for $3 because no one was buying). They also do 4kg trays of strawberries for $10, and other bulk deals to get people in the store, especially weekdays.

    • Also on this, buyers with a good relationship with their suppliers will get good deals on things they need to move fast. Cancelled order so they've got a tonne of plums more than they expected, crop all ripened over a shorter window due to weather etc..

      • Agreed. Berries hit with rain will mould quickly, need to clear. One mouldy one in a punnet makes it second class, etc. I see plenty of trays at Harris Farm with destinations far far away from where I am.

      If you sell 10kg for $10, you make $10, compared with throwing the stuff away. Most of that produce in Henrys Mercado that is sold by boxes is near (and sometimes well over) "best before" date, usually you throw 10-30% of the box straight away due to mould etc. It works for some buyers though.

      I think they also make money on volume.

      Normally green grocers have people coming in at a snails pace, but Henrys is like cattle moving through an stockyard: just a nonstop flow.
      People also get larger quantities. Last time I went I bought 12 mangos, whereas normally I'd only buy 2 or 3

    I grab what on special that day and work my meals around those ingredients.

    Great value and always good quality!

    Also the fruit and vege they have on special aren't the greatest quality, probably Colesworth rejects.

      Been to henry's once. Tbh, these on special are not even good quality…

    • Too much walking parking too difficult, easier just to do one shop

      • The problem with this outfit is that the specials often change every day, because I suspect they receive very little stock (at very low prices) from their suppliers, and so has to improvise with their specials every day. The other stuff is OK-ish price wise, but the only reason you'll go to Waverley Gardens (the Rowville store sucks in comparison) is for the specials, unless you're a local.

        …and then you find the quality to be less than desirable, especially if you arrive late in the day and the good stuff is picked clean.

        You can 'park and ride' from a residential street for the 901 bus, which will take you to the entrance of Dandenong market.
