They are almost the same, the only major difference is that the 8 features 360° Pan Rotation whereas the 7 is limited to 222° mechanical pan.
Both support automatic subject tracking to keep the person in the frame, but the 8 has native Apple DockKit support. That's not super important since either version has DJI’s ActiveTrack
The Mobile 7 is also lighter by about 70 grams since it doesn't have a built in tube extension. (300g vs 370g)
