      The instructions on the back of the duck is pretty good and self explainatory. I'd look into making sure you also collect the dripping to save as lard for roast potatoes etc.

      What you plan to eat with the duck is also important. I love my plum sauce but I'm also partial to making a home made peeking duck with some wraps, cucumber, spring onion and Hoi Sin sauce.

      Please note that you don't get as much meat as you think with ducks so don't assume you will be eating it for days afterwards.

      • thanks for the tips! Duck is very bony, so im not a huge fam- but the family love it so im going to attempt to make. Plum sauce is delicious :)

        • The other option is to break the duck down to breasts and legs (not too difficult - youtube is your friend). score the skin on the breasts and pan fry skin side down, do render the fat and flip at the end.. best served pink.

          Take the legs and confit them… cured with salt and spices, wash and cook low and slow in duck fat. You can leave them submerges in the fat and pop in the fridge (they'll keep for a long time). whenever you're ready, take them out, crisp up the skin on a pan and you're good to go (https://www.google.com.au/search?q=confit+duck+leg).. great served on some puy lentils or with some mash and green beans.

  • How do they make sure each duck is 2.2kg straight? By adding "duck juice"? Curious…

      • I do luv ducks though. They taste nice. Just find selling them in specific weight is funny.

    mmm, almost makes me wanna get a couple of ducks to break down. Confit the legs for a winter cassoulet, freeze the breasts to grill up later, render the fat to cook potatoes in and use the bones for stock/soups…
