Nitrates and nitrites are two different things - the link you posted refers to sodium nitrite, which is a particular curing salt used in bacon and ham and other charcuterie to ensure safe curing and to stop botulism from developing.
This is just raw mince. There's none of either nitrate or nitrite in it.
