    • That will be subjective to you ;) hand size and grip change if it feels good or bad to you.

        For example the Furi chef knife has a reverse wedged handle which fits well in my hand and the weight of the knife adds more power.
        The Tojiro chef knife has a smaller handle which may be easier to grip for smaller hands.
        German knives are generally stronger whilst Japanese knives allow for more precise cuts.

        • Thanks, I have the Global G2 and Miyabi chef knife and Victorinox santoku, and kiwi knife. I think I use my Victorinox santoku most of the times, because it has bit of weights on it and easy to look after. There are so many good knives where you can't physically try it or unless you fly to Japan and try their knives lul

            @Yaren24: Yep. When i was starting out in hospitality 10 years ago i really wanted a hattori hd series gyutto. I never have had the chance to buy one or try it but it is a jap chef knife with a german/western style handle :)

            These days i use a guisermesser 25cm orange handle cheapie. Cost $25, holds a reasonable edge with honing to last 2-3 weeks between stoneing. In a commercial kitchen things get banged dropped damaged by dishies ect. Its just easier to have a beater knife then a fancy one i have to stress over.
