Hi Guys
Can anyone give a non-gamer some recommendations
firstly, a couple of fun games that can be played by multiple adults, learned quickly, and still learned/played in an inebriated state.
secondly, absolute classic games for Wii that give long term game play. (maybe car racing genre / adventure mario style genre etc)
third, any educational games that can help kids learns numbers/alphabet/maths/words etc and fun.

Well the new super mario brothers is an absolute must. I love it. Someone has also modded the Image and changed all the levels so they are super hard. Check Here!
It is great 'inebriated', you can play 4 player, and throw your friends into lava.
I recommend you install home brew on your wii, it allows you to play gamecube/n64/super nintendo games on it, which IMO is more fun than any game on the Wii, (though has legal issues) it also allows playing games (backup) off a hard drive (if you are little better on computers)..
Also obviously Mario kart, super smash bros, and mario party (although mario party on wii isnt the best).
The new Donkey kong country on wii is good if you liked the original. only 2 player though.
New Super Mario Bros Wii is great, especially for multiple player co-op.
I would actually recommend one of the original Wii titles, WarioWare: Smooth Moves, this game is hilarious, quick and very straight forward, you should be able to pick it up for less than $20 too.
Mario Kart is great, I also LOVE Wii Sports, also have Wii Sports Resort but haven't tried it yet. They entertaining but you can also use them to get a good workout.

Super Mario Bros can't helping kids for learning i think, but it's a good game…

Resident Evil 4. Probably the best game on the Wii.
I think endless ocean is the perfect game. You go around scuba diving, it looks really pretty, and there are not "traditional" confrontational game mechanics.
Mario Kart is essential. If you are into it rock band can be good also (I haven't played the Wii version).
Zelda/Mario is fairly safe, though neigher excites me.
