When you say "leaving"… do you mean they remove it from your library of playable games? Or do you always have it from then on… but new member won't get it?

As long as you've gone to the store and purchased it, you'll be able to download it and play it if you have an active PS+ subscription.
Also, if you're planning on buying a PS4 you can go to the web store now and "purchase" PS4 PS+ titles and they'll be there when you eventually get one.
I played Contrast earlier, its a really cool arty game. Not sure at what point I started enjoying it as it started out so generic and unpolished (in terms of game play) and before I knew it I was well into the second act (there are 3)
Also Resogun is excellent.
Is don't starve cross play? Wouldn't mind it on my ps vita.
Not mentioned, it's not been published to the PlayStation store yet so there are no real details.
If by cross play you mean the same save file for both PlayStation & PS Vita then maybe. If you mean cross buy as in you get access to the PS Vita version when you buy the PlayStation version, then I don't know that either.

Don't Starve developer Klei informs it's focusing on the PS4 version and remote play functionality at this time. A PS Vita native version is still being explored.

In regards to the PS4 there are online games that do not require PS+ to play online, these are typically Free2Play and are probably accompanied by in-game purchases. Most games with online will require PS+ to play.
