        You basically clean it with soap, cover it in oil, and heat the oil to the point that it smokes. A couple of rounds of oiling and smoking, and you end up with an anti-rust, mildly non-stick coating. Do it right and your cast iron cookware should last for decades.

        It sounds like they come with some sort of coating already- it says they're only safe to 260 degrees, which is way below the meting point of iron.

          Linseed / flaxseed oil is supposedly the best. Make sure when you wash you don't use anything abrasive. You may need to re-season occasionally depending on your usage and cleaning methods.

    Thoroughly wash in ridiculously hot water the new pans and scrub the bejeesus out of them with a brush.
    After its dry fry some oil till hot, swirling it around.
    Let it cool and wipe out with newspaper or the like.
    Put it in the oven on high for 30 minutes.
    Then rub oil back in once its cooled down and wipe with paper towel.

    • are these definitely raw/bare cast iron? as above, "Oven safe up to 260C" makes me suspicious…

    • Just bought a set. I've been meaning to jump over to seasoned pans ever since discovering them, though we lack a large gas oven to do step 4. Am guessing with the handles they won't even fit in our little toaster oven. Will be visiting the relatives house to exploit their gas oven.

    does it make a big difference whether you buy a cheap (like this one) or an expensive cast iron pan?

    • expensive cast iron pans are normally enamelled. in which case, it does make a difference…not better or worse, just different. bare cast iron and enamelled cast iron have different properties, with pros and cons for each.

      for bare cast iron, cheap pans should do the job fine.

        Bare cast iron can leach a significant amount of iron into the food, which is a good thing if you are anemic like me, but bad if you have a hemochromatosis. Bare (seasoned) cast iron also has better non-stick properties than enameled and can allegedly withstand higher heat.

        The downside of bare cast iron is that you have to maintain the seasoning and it can be harder to clean.

          another thing is that bare cast iron shouldn't be used for acidic things like tomatoes…the acid can react with the iron.

        • I've got a good set of Lodge cast iron pans (i highly recommend) … they are very easy to clean, just rinse under hot water and give a quick wipe with a cloth or scrub with one of those cheap plastic brush cleaners, dry and then wipe down with an oily piece paper towel after.

          I bought the expensive cast iron pans due to the fact that i plan on having them for a lifetime, they can used to cook on all surfaces … and most importantly they are made in america, so im a lot more confident they were made with good clean iron (which i consider rather important when you think about the leaching factor)

          yeah, lodge cast iron stuff is great. i wouldn't call them expensive tho…they are more expensive than the cheap stuff, but they are quite reasonably priced (in the US at least) for the quality.

          but if you want REALLY nice (bare) cast iron, check out Oigen! i drool every time!!! :)

  • The preseasoning these days are usually chemical laden. Are these bare cast iron or preseasoned ?

  • bought a set, i use cast iron at home and love it.

    Got sick of non-stick sticking after 12-24 months, no matter how good a quality i bought and how welll it was treated.

    Cast iron all the way.

  • mine arrived with handle snapped in two pieces! have requested a replacement/refund… :(

    they are quite thin/light for cast iron. a bit worrying that the handle could snap off so easily, but hopefully that was just from insufficient packing and rough handling…

        yeah, they are quite thin/light for cast iron…the cross section of the smallest pan where it broke is about 2-3mm, to give an idea of thickness.

        which is handy in making them easier to manage, but not so good for sturdiness/heat retention. but hopefully they do the job ok.

        1-day said they didn't have stock to provide a replacement, so they've offered a full refund. oh well, that's cool…if they do the job well, i'll buy a full replacement set next time the deal come up!
