Winemaker’s Notes

Above average rainfall and lower than average temperatures posed some challenges for winemakers in 2011. However in amongst it all there were a couple of varieties which seemed to thrive in the atypical conditions. Small bunches and good air flow in our Cabernet blocks on the hills above Lyndoch and Rowland flat ensured clean fruit and much less disease pressure than some other varieties.

This coupled with the lack of significant hot spells which allowed Cabernet to ripen slowly, retain a strong varietal presence and fine lines and ensure that it was widely considered to be the pick of red varieties from the Barossa in 2011. As a result some pleasing results in the wines from the region.

Colour: Dark red garnet red.

Bouquet: Classic varietal Cabernet nose with plenty of ripe red and black berry fruit and hints of sandlewood and cedar.

Palate: A powerful but elegant palate with a vibrant, lifted varietal fruit profile showing black berries, dark plums and a hint of Morello cherry. The fruit is framed by classically structured tannins which have benefited from the slow ripening vintage and time in oak to contribute wonderful length, subtlety and ripeness. There is a final lift of fruit to perfectly balance the finish

Cellaring: Drink to 2020

This is the Schild Estates Cab Sav

    Is it any good ?

    • +1

I haven't personally had the Cab Sav, however have been recommended it by a friend who preferred it to the Shiraz. I very much enjoy their Shiraz and I'm generally more particular to a Cab Sav, so I'm keen to try it!

        I ordered… $36 Delivered for a dozen isn't too bad… (using $45 credit)

That works out to $3 per bottle, delivered.

        • Haven't tried the Cab Sav but a big fan of the Shiraz :). At $6/bottle worth taking a punt!

        • Weird I paid $27 delivered with my $45 credit. Had a look at the receipt and they have charged shipping but also included a $9 voucher too. No idea where that came from.

        • That's odd… Extra bonus for you :)

For $36, that is definitely a bargain!

  • I like it, but not to everyone's taste.
Huon Hooke panned both varieties, according to Dan M

Huon Hooke Prolific Australian wine reviewer for Fairfax Media and huonhooke.com

    Vintage 2011
Ranked 57 of 59 2011 Cabernet Sauvignon tasted from South Australia
Deepish red colour with little purple. Mulchy, vegetal aroma with a crushed stalky scent. The palate has a decided greenness, especially toward the finish. Grippy, slightly bitter green tannins dominate the after-palate.

      Huon Hooke panned both varieties,

But we all know that Huon Hooke is a well known wine troll…

  • I've given this as gifts to friends & relatives. All have liked it and wanted more!

      have you tried it?

      • I haven't no, as I don't like red wines, but I don't think my friends & family would lie to me.

2011 is supposed to be the worst year for wine in Australia for quite some time, because of the floods.

Having said that, I bought a case the last time they had this special - it was pretty light for a Cab Sav, but very drinkable. I'm going another case - it's a good after work quaffer.

  • Great value at $6 a pop, get in quick before it sells out. This is one of my favorite mofo wines !!
