Salami

Hey gang,

Making salami this weekend for the 2nd time ever. Just got a question for anyone who might know but last year I used home made red wine in the mixture which I do not have the luxury of using this year (less and less people making their own wine).

I was told a shiraz was ok to use but wasn't too sure given that home made wine has no preservatives…

Thoughts?
