[SYD] Pork for spit roast

Will be going to a friend's place for dinner this weekend. I sugguested spit roast and I will bring the meat.

I want to bring pork for a change, problem is I have no idea which part is the best for spit roast. Any suggestions please? Is 3kg about right for 4 to 5 adults?

Also, any recommendations where to buy good quality premium pork?

  • Without a doubt rolled loin from the butcher - get them to tie on fat for the crackling.

    3kg would be too much for 5 I think - that would be 600g each or equivalent to eating a 21oz steak! Depends if you want left overs I guess.

  • Nah, I say go with the 3 kg. With a pork spit-roast (much like it's humorously-named non-culinary counterpart) quite a lot of the initial weight is lost in the process; moisture dehydrates away, fat drips off etc. And it's much better to have a bit too much than too little, in a sitch like this. There's nothing worse than a spit-roast where the meat is exhausted prematurely; before everyone is satisfied.

  • Thanks guys! About the rolled loin, is it usually pre-rolled? Or do they roll it on the spot? You can tell I don't buy pork often.

    • Usually pre-rolled, but not always; depends on the butcher/ their usual supply/ demand/ how busy they are etc.

      Don't be at all shy about going to a decent butcher tomozza (Friday) morning and asking them if they can make you up a 3 kg rolled loin (with some fat incorporated around it as wisely suggested above) for you to pick-up on whichever day of the week-end you need it. Also, generally you will find butchers to be very helpful re anything you want to know about their products/services, so don't hesitate to ask them. In my experience, they've been really keen to share their expertise/ seemed genuinely happy that they've been consulted!

  • Thanks for the responses, the host has bought the meat this morning to allow time to marinade, so I don't have to worry about it this time. It's good information for the future, as eventually I will have to buy some.
