Minas de Oriente is a special project that MTC teams in Australia and Guatemala have been developing over the last couple of years. Throughout the duration of this project we spent countless hours cupping numerous single estate lots, until the perfect combination was found. The concept for Minas de Oriente is similar to development work we have been doing in other origins. After we select the best lots to be milled as single estate coffees, we then work with the rest of the farmers’ lots. This ensures these lots don’t just get bulked namelessly and sold at commodity pricing to the big multinational mills. This maximises the price that small farmers receive for their overall harvest. It ensures they get higher prices for more of their production and only have to sell small amounts of their lower grades to the local market.
Minas de Oriente is composed of three elements, which are fully traceable back to our suppliers in New Oriente Guatemala. Minas de Oriente means “Mines from the East” in Spanish. The name comes from the abundance of precious mineral mines that were once common in the eastern side of Guatemala. New Oriente is quite dry and arid compared to other parts of Guatemala. The region is very close to the border of El Salvador and has similar cup traits.

About Ethiopia Shakiso Guji Tade GG Washed
The Yukro station was constructed in 2010 with the technical assistance of TechnoServe’s coffee initiative.
Cooperative members selectively pick fully ripe red cherries and deliver to coop’s wet mill, the red cherry received by the coops is then soaked in the tanker filled with water to sort out some floating cherries before pulping. Normally pulping is done after sun set. As the cherry is pulped using a mechanical demucilager, there is no need for fermentation. The parchment is soaked in the soaking tank for about 6 hrs to remove any mucilage left on the parchment
Before pulping all over ripe and immature green cherries will be sorted out on the cherry sorting table. Drying is done on 1.10m high raised drying table on mesh wire. The parchment will be covered during the overhead sun and night time. The parchment on the drying table will be frequently turned every 15 minutes for even drying.

    Thank you once again Simon and the team @ Manna. It's been a while (I've been home-roasting) but it's time to come back to the professionals!

    • Welcome back :-) How did you find the home roasting? What were you using?

      • Home roasting is proving to be quite an adventure. I'm using a Behmor 1600+ and I'm just now learning how to harness the variables that come with roasting. I'm still going at it (roasting at home), getting slowly better, but it's a learning process. Plus, i'm not roasting enough coffee to enjoy for myself; hence the return to having a good supply from a trusted source.

      You guys are nuts! It just got delivered! That is the fastest turnaround I've experienced thus far :)

      • Great stuff thanks for the feedback! Just something to bear in mind, although you can get stuck in straight away, after roasting the coffee needs to degas (release co2) and allow the flavours to develop fully. This can take a few days so if drunk immediately after roasting may not be at full flavour and can be a bit more sour.

        Different coffees develop at different rates and also degree of roasting has an impact. Just something to bear in mind if you experience super fast delivery! Other than that I hope you enjoy your weekend and your coffee ;-)
