Hey guys, I really need help here. It's very difficult for me to leave my house so doing a course that requires me to have more than 2 contact days a week is out of the question.
I'd love to do multiple "one day" courses that gave me a certificate at the end of each day so I can show evidence of the courses.

Most of these courses are only 8 to 16 hours long. You'll get a Certificate at the end of it.
If you're trying to make yourself employable, these Certificates mean nothing to the employer. They won't be interested in. They could be of use for training purposes but not really worth adding to a resume.
