Probably do a tour yourself.
Include:
Day trip to Port Douglas/Mossman gorge (hire car)
Day trip to kuranda (Skyrail up and train back)
Day trip to the reef - can recommend "reef day tripper".
Hang about day in town at the lagoon.
Possible trip to Crystal cascades (local mountain river/swim spot) and local beaches. (hire car)
