  • Any tips with cast iron care after a nasty steak. I've been washing it with hot water and a light brush then reseasoning afterwards, i want to make sure I'm not ruining it.

      Best way I have found is wash while pan is still hot in cold water with metal scourer. Season with oil once every half dozen uses. Don't try to oil it when it's still wet. I leave mine on the stove and oil it an hour or so later so any residual water has evaporated. Sometimes after a few months chuck it in the oven when cooking a roast or something to give it a good proper season and that's it.

      • didn't know cold water can be used, I'll do that from now on, I've burned my fingers way too many times while rinsing it ;)

          The cold water becomes instant hot if washing immediately after use. We have about 5 pans and use them everyday. Never had one buckle or warp from the cold water even when pan is very hot. If in doubt just let it sit for a minute before washing. I find that washing immediately after cooking is easier to clean the stuff off. It tends to set in if you let the pan go cold. Remember you can't soak so it's really the best way.

          Just don't ever use detergent and if you see a spot of rust hit it with water and metal scourer, dry it then season with oil and throw it in the oven.
