Coffs Harbour; to do`s/must see`s/local eats?

Have two weeks in Coffs harbour, birthday present from new girlfriend and a meet the parents test……
Heading over from WA

Locals help please;
Must sees. Definite to-dos.
Great local eats.

    plenty of mapped out and sign posted 'roads' thru the trees. We stayed just north of the town and I took my registered trail bike, it was awesome. I bought a paper map for $5 from parks & wildlife (but it's not really needed if you have any sense of direction)

    Download the Coffs Coast Travel Guide on google play / app store. Heaps of good stuff to do. Go to Raleigh (15 mins south) and go go-karting with her dad while she does horse ride with her mum at vallery trails (same location)

    About an hour west is Dorrigo - world heritage national park with pretty good bushwalks.

    Re food - go to Saltwater restaurant at Nautilus resort (10 mins north of coffs)

      its been suggested there was a voucher book for coffs coast, havent found anything yet……

    To get you started..
    To do's
    - the big banana; the touristy stuff like ice skating
    - check out the different beaches; digger's, park, sapphire, jetty (+ do the jump)
    - there are a few coastal walks

    Great local eats.
    - brunch: Any of the cafe's in sawtell. #1 for me is Treeo.
    - dinner: lime mexican (there's two, different owners), marias (italian), latitude 30 (upper class), creasian (asian), mana chita (ethopian), taste of north india

    - out of town: belligen - indie shops, cafes. Go on the 3rd(?) saturday of every month for the big local market. there's a great quiet swimming hole called the 'promised lands' which might be a bit hard to find. try 5 on church st for food there. and the gelato place.
    - markets in sawtell as well,

    edit: a lot of things to do 'in coffs' are actually out of coffs. So do a bit of research into bellingen, nambucca, dorrigo, valla, etc.

      Been scanning the map earlier today and getting a bit more familiar, with places you suggested I'll follow up more thoroughly
