So I just started using Cashrewards, and I purchased the ebay vouchers on groupon and got cashbacks on them (should I have been? I heard we are not supposed to be getting cashback on giftcards/vouchers).
They are not cleared yet but I can see the amount pending.
Then I went to ebay from Cashrewards and purchased $500 worth of stuff yesterday, the pending amount of cashback from this transaction hasn't shown yet (both using paypal and vouchers to pay). Is it normal?

So basically, in your situation, cashback shouldn't pay at all!

I did purchase stuff on ebay with cash but I think I know why I didn't get cashback on them (I bid for them on the app) and won and paid for them through the site.
So if we do get cashback, email saying we are entitled to some cashbacks will appear not long after right?
It can take a few hours… even up to a day for the email to appear saying that your purchase has been tracked.
If it has been more than 2+ days you can assume the purchased was not tracked. You should then contact CR customer service ASAP for assistance.
Tracking is really hit or miss I'm afraid. I purchased $500 worth of stuff from eBay last week as part of the CLICK20 promo, and followed all the instructions on the CR page but I still don't have any pending amounts. Other times, tracking is immediate.

Yesterday I bought something on groupon. GOt my tracking email and confirmation from CR within an hour.
This morning bought something on ebay. Nothing. Did exactly the same thing.
I suspect they lose a lot with ebay, but who knows…
Still might not go through. E.g amaysim cashback wasn't honoured if you cancelled service within 3 months. The amount was shown as pending then went to 0 later on.
Have you read the "Cashback schedule"?
