I want to have a replacement from apple store.
What's the easiest and surefire way to get a new phone.
will they give new ones or refurbished ones.

they wont give you a new phone. if you are lucky they may give you a refurb if it hasnt been tampered with or user damaged.

You could always try your luck and say the battery dies really fast and turns off…

So you want to get a replacement for a phone which works perfectly fine? Why would Apple give you a replacement? Sounds like a scam to me.
yes, you can simply exchange it.
apple offer a 2 year -no questions asked- swap policy. they just don't advertise it too much.
it falls under section 12 of their corporate product guideline policy.
just refer to that and don't back down when the "genius" bar staff try to deny it exists.
and because you're swapping a phone you don't need to make an appointment. just walk straight in and they must serve you within in 5 minutes.
