New AmEx Offers - Spend Criteria

just wondering the new Amex offer, posted by forumninja

They all have- spend XX amount in one or more transactions by such and such date
Question is - can we make up multiple transactions and make up that amount?
Has anyone tried that?

e.g this SCA one
