Im looking to travel overseas on June
Departing 22 June -> Sydney - Madrid Arriving early morning (before 9 AM)
Returning 5 July -> Rome - Sydney (Departing late after 9 PM)
I been looking for any available flights but cannot get the price down below AUD 1700
Prefer to travel either using Star Alliance or One World

I would keep an eye on Air India or Air China, they've both been offering cheap fares to those locations
On your dates, for $1,200 you can fly Etihad:
SIN-MAD
FCO-SYD
It even seems to match your preferred flight times as well.
BA (if you want OneWorld) would be $200 more and longer flight duration as well.
Then add a cheap Scoot fare for SYD-SIN.

Look on Kayak, use the Multi City option and then SIN-MAD, FCO-SYD.

It's your time frame that limits your options. But if you were to leave Sydney at 2pm and Rome at 10:55pm you could do Air China for $1270
$1700 is a good deal for travel in June. I'd book it.
If you're going to be that specific about flights i'm actually surprised that you found them for $1700 during that time of year…
Cheapest on those dates is $1392 but that still doesn't meet 90% of your criteria..
