If I was to buy something at these stores with a gift card and return it for a refund, would they refund to my bank account or would they only refund with another gift card?

Only works with brand new casual staff. Not all stores have safeguards to ensure it's paid back to the original method without staff intervention. Could wait for the oct/nov hiring period.
You could try advertising something for sale on Gumtree that loses very little when second-hand and wait for a buyer that will pay by bank deposit. Then you could buy the item with gift cards and send it.
