    Demoiselle Absinthe is most definitely real absinthe, the key herb that makes absinthe absinthe is Grande Wormwood (Scientific name: Artemisia absinthium).

    Absinthe was never banned in Australia, although it was banned in most the rest of the world from around 1914 - 2004. The maximum level of thujone (the active ingredient in wormwood) allowed in Australia is the same as that currently allowed in Europe and similar level to that of 1800's absinthe.

    Too much focus is put on the quantity of thujone in absinthe, more important is the aroma and quality of the wormwood, we are one of the few absinthe distilleries in the world that grow and harvest our own wormwood. Our wormwood is hand harvested and we propagate our most aromatic wormwood by cutting to maintain the aroma.

  Hey OP…..what sort of thujone level are we looking at with your product? Also curious as to how strong a flavour does the lemon myrtle impart? Thx.

    The lemon myrtle is used judiciously, it takes the place of the traditional citrus herb used lemon balm (that we use in our french style absinthe Verte Originale). The flavor is definitely there but not overpowering.
