Best guess is to look around for a medical transcription job.
Lots of competition globally for transcription, people can do it literally from anywhere in the world and charge low prices. e.g. http://transcribeme.com
She may be able to find a local doctor or company who may not want to send medical records overseas for privacy reasons, so they would pay a bit more, and she has a nursing background which would give her an advantage in understanding the terminology. Still lots of competition. Huge numbers of people want these types of jobs.
what uni year is she in? could she tutor first years?

Remotely handles appointments, answers questions, does typing from dictations. Then the DR might be able to have someone else come in and handle greeting patients etc
