I replaced the wheels on my office chair with these as I am sick of the plastic mat I was using moving around and its general yellow appearance. Is it safe to use the bunnings castors on a bamboo floor? If not is there a better brand or should I stick to the mat?

Castors will still scratch the floor as dirt and tiny rocks get ground up between the castor and the hard floor. You will end up with an area which has a sandpapered look. Get a rubbery mat perhaps?
ikea sells a pretty cheap floor protector. I'd use that.
As other mentioned, stuff gets caught between the wheels and the floor and gets ground into the surface.
Another option might be a piece of carpet?
Castors might scratch the bamboo floor - can you put a carpet rug underneath?
