Looking for Budget Staple Meals for Good Breakfasts and Lunches

Hey, so at the moment my breakfast currently consists of Weet-Bix and sultanas. Gets a bit boring after a while.
I am looking for 3 solid combos that I can adopt for breakfast and lunch. A good alternative at the moment appears to be an overnight oats recipe for breakfast, but looking for other healthy suggestions.

For lunch, my workplace has a fridge, freezer, toaster, sandwich press and pantry. At the moment my go-to is the little tuna tins but looking to mix things up.

I value healthy eating over cheap eating. Would love to see some ideas.

    Lunch option 1: Ham and cheese toasties. Cheap, quick and easy.

    Lunch option 2: Soup from woolies + bread - great for winter.

    Lunch option 3: Spag bol - make a heap on Sunday night, have some for Monday lunch and freeze the rest for quick dinner after a long day.

    Breakfast option 2: Bagels, cream cheese and smoked salmon

    Breakfast option 3: crumpets

    • Bagels + salmon is a good combo. easy enough to prep.

  • Vegetables. Meat. Legumes.

  • Fruit Vegetable smoothie??

    • Are they substantial enough for a breakfast?

        I do it everyday

        Partly due to being lazy to eat in the morning

        But you should try make it more efficient and economical when possible, for example:

        I make 5 batch every weekend,

        • 1 Store in the Fridge for next day use
        • 1 Taken immediately
        • 3 Store in the Freezer, leave it in the fridge overnight for it to defrost
        • What ingredients do you use?

  • Speaking of sandwich press, any good deals on them ATM? They never seem to be on special in the way that other kitchen appliances tend to?

    Breakfast. 1 tub of chorbani flavoured yogurt, 80g frozen (thawed) berries, 70g Carmen's oats.

    Make your own salad with hardboiled eggs, chicken breast etc. Not too difficult. Also some natural set yogurt with some jam for sweetness is a nice healthy lunch. Helps if you have a salad spinner so you can buy a whole head of lettuce.

  • You can make your own bircher muesli by soaking some muesli in apple juice overnight and adding yoghurt to it, a bit sweeter obviously with the apple juice but its a nice alternative to oats all the time.
    Also, I find roasting veggies is easy enough to do ahead of time. You can do enough for the whole week, as long as you keep it refrigerated and then cook off whatever protein you want to eat with it, or maybe buy a roast chook and spread it over a couple of days.

  • Sometimes buy a round of cheese (or half price Tasmanian Heritage), a roll of crackers and just slice and eat for 5 days. Sometimes buy some salami/prosciutto if I feel a little fancy. One cheese lasts me a week (I limit myself though) but still works out pretty cheap. Also buy the individual yogurts on specials, buy a bag of muesli and mix. Different flavours so you don't get bored!

    I have been making some soups over winter, I spoon a few in cleaned out glass pasta sauce jars and bring that with a roll.

  • Breakfast
    1) Steel cut or rolled oats (instant are a bit processed), some fruits mixed in and some chocolate whey protein mixed in a bit of milk and poured on top. And don't forget the maple syrup (not the fake stuff)

    2) Good 'ol baked beans on wholemeal toast.

    3) Poached or fried (in olive or coconut oil)eggs, some more beans, a bit of bacon cooked in the oven.

    Lunch,

    1) Do up a salad to take with you, grab a tin of Salmon (less mercury than Tuna)

    3) Rotate the above or go out for lunch once a week.

    Breakfast Option 3: Turkey Slices, Tomato, Cheese, Toast

    Are you willing to pre cook? These will take you 15 minutes a day to prepare and take for lunch in the morning of the night before

    Lunch Option 1: Panko Crumb, Italian Herb, Permesan Cheese coated Grilled Chicken Breast with Steamed Green Veg
    Lunch Option 2: Grilled Topside Steak with Steamed Veg
    Lunch Option 3: Packet Ravioli

    I just make everything on a Sunday and microwave it during the week at work.

  • Pumpkin Soup with a grilled cheese toasty.
