I own an Xbox one X currently, preordered Smash edition of Switch and planning to get a ps4 on boxing day. And during boxing day I want to get a 4k monitor/ tv as well.
Thinking of getting either of these:-
Kogan - Samsung
Kogan - AOC
But haven't used Kogan before, either AOC.

Depends what you're upgrading from.
I've been gaming on a 2009 40ish inch LG Full HD tv since we bought it around 2010. Recently upgraded to a 50" Hisense 50P7 with a One X and it looks amazing. They're also currently 20% off at JB and The Good Guys.
Based on my research there aren't any 4k TVs with a 10Bit Panel/Wide Colour Gamut HDR better in that price range.
Bought the 55" P7 on that sale after 7 years with a Soniq 49" and can also highly recommend for the X and Pro. Both look stunning.

Best mate has a 1080ti and 27inch AOC 2K monitor and it looks beautiful. Never really considered them for anything until he showed me.
Any recommendations for the 75" category.
Main usage will be steam link or pc usage so no OLED but might get some consoles later down the line if they get nice and cheap.
I don't have any suggestions but those monitors in the description don't have FreeSync over HDMI, only DisplayPort.

Since you're looking at monitors, I'm assuming you are sitting at a desk? Generally speaking, monitors have less input lag than TVs so they are a better choice for responsiveness.

Thanks mate, I'll definitely consider looking for something with free sync over hdmi. Yes I'm using a desk. Want to redo the whole desk setup too. Is there aanything else I should keep in mind while getting a 4k monitor?
Monitor, I suggest the LG 27UK600, HDR 4K IPS 60Hz Free sync.
TV, Hisense 6 or 7 series are both good. depends on the size you need.
OLED, get the cheapest you can.
Are you aware that consoles are designed to be watched on a TV? Like, in a lounge room? With bigger screen and sitting at a distance?
Games made for console have a different Field of View compared to PC games (where monitor is in your face). Console games can look weird played on a screen in front of your face.
FYI
Don't get a tv, if you get a monitor it will make your console have less input lag and is better. So get a BenQ or a good monitor that is 4k and will cost around $500-600
