My uncle is here from Hong Kong and we're trying to help him with his shopping by directing him to Australian retailers that are able to auto convert/show the final price in HKD as opposed to Australian dollars. An example would be Air New Zealand who automatically converted his final price into HKD once it recognised his CC was Hong Kong based. If you know of any retailers (regardless of industry) that have that feature, please let me know.

Usually, with most airlines, the original price of flights are in the currency of the originating country of the first flight in the itinerary.
So in the case of Hong Kong, the original price is in HKD, as his first leg is from HK.
A currency conversion would happen to switch it to any other currency, and the company usually keeps a percentage conversion fee.
In the case of retailers, most in Aus has EFTPOS terminals that have DCC (Dynamic Currency conversion) enabled. However, the terminal will prompt to you if it will be charged in the home currency(AUD in Aus) or the currency the card is in. I usually select the home currency as Visa conversion rate is much better than the terminal operator conversion rate.
According to DCC guidelines by Mastercard and Visa, the customer should always be given the choice to select, and the retailer or the terminal operator cannot force the currency on the customer.
