My wife is a big fan of Pokemon Go and she wants to try out Pokemon Let's Go. Is there any shops in Sydney where I can hire the console for a few weeks (I know places where I can hire the game). I am almost certain, after a few weeks, she will not play anymore.

Yeah buy, try and then sell. You'd probably make close to your money back. I'd recommend Just Dance, awesome game
Buy it from the current EBGames Ebay deal for $359, play for a few weeks and sell it easily afterwards for over $300.
Better yet, embrace the inner ozbargainer and return it within the 7 days.
Maybe she'd like some other games too? There's lots of awesome games for more casual players

Used Switch's retain their value quite well, I can almost guarantee it'd be cheaper to buy and resell than hire. Another option is getting a used one from EBGames, which I'm pretty sure you can return for a full refund no questions asked in the first month (do confirm that though).
There is one in Parramatta westfield where you can rent consoles etc.

If it's for Pokemon Go she'll probably want to keep using it to transfer Pokemon to Let's Go to keep getting access to the Mystery Box in Go.

PoGo is what drives me to pick up my Switch at least once a week
Hi - not sure about renting but you can pick them up not too expensive on gumtree, use for a few weeks and then sell it right after. Similar to your "buying" and returning suggestion - but more morally correct.
