Is it possible to use points to upgrade from economy to business class after having purchased an economy ticket?
Would it be better to use points entirely to procure a business class seat?

You have to have the 'right' level of ticket to do a points upgrade. Basically the full fare economy ticket (aka not a cheap sale ticket) which from memory was a Freedom ticket to do a points upgrade on virgin to business, the Getaway and Elevate classes don't work.

i book my etihad business flights on either the airfrance or klm website because its way cheaper then directly on the etihad website
I'm reasonably confident you have no way of upgrading from economy to business on an Etihad operated flight using velocity points- the only way is to redeem for a reward flight, and there's not a lot of availability at that (don't waste your money on those ridiculously priced "any seat rewards").
