  So instead of listening to CD quality, which is the highest possible quality, we listen to vinyl that might achieve fidelity equivalent to 11bit sampling.

    Yep. Some people may have a problem with this and some may not. Some people just prefer The Beatles in stereo, some are quite happy with it, and other aren't. Best to do your research to see if these LPs meet your needs.
