bsasically buying a cheffs knife for 129$

the pairing knife is handy but tons of cheap ones that are fine to use

and the other knife is redundant

    • First time to buy Global knives. I'm feeling waste of time when cooking with my current knives from IKEA, hope Global knives will worth the price.

      • I bought furi set 6 years ago from VB. Really tempted to buy these but the furis are still razor sharps.

      • +1

Global knifes are good value, although a bread knife in the set is a much better option than the mid-sized knife. Just remember that ANY knife will eventually become dull, so it's worthwhile learning how to sharpen knives, or spend a bit of money every now and then to get them sharpened.

        • IKEA knives will become dull every two weeks after sharpening, maybe I'm not good at knife sharpening haha.

          • +4

@1000060: You feel it's dull because the edge becomes bent. You need to use a knife honer to restore the bent edge before every use. I usually sharpen my knives once per 3 months.

            • @Bob Lou: This. I've got an IKEA knife which stays pretty damn sharp for a few months at a time - but I quickly hone it after each use.

          • +5

@1000060: Easiest way to keep them sharp is a leather strop, ideally with some polishing compound on it.

Much easier to use than a honing rod. And with the compound will actually do a small amount of actual "sharpening".

I rarely need to actually sharpen my knives.

If you're interested in stropping lots of youtube info. Suggest starting with burrfection. He's a bit of a geek that goes through a lot of info on sharpening. I'm one of those weirdos (says my GF) that loves watching videos on knives, and collects knives.

They are really good and will last you a lifetime. Buy a global sharpener as well.

        • I use the Global minosharp ceramic sharpener and it restores a very sharp edge nicely, in very little time.
Based on above comments, should we be doing a more thorough sharpening every once in a while?

          • +1

@mith: I would say only as and when required.

mate, you won't regret it. i've had mine for 5 years.
i've gotten mine professionally sharpened (2 knives for $15) with a sand belter and removed the small chips from my poor care, and theyre deathly sharp.

Agree with you there. I have this set and use the chefs and pairing knives all the time. I only really use the middle sized knife if the chefs knife is being used or dirty and i can be bothered cleaning

    • Yep, we had basically this set 15ish years ago, we still have the chefs knife (use it for hard vegetables), but we never really used the medium sized knife and the little Victrinox knifes are better for most things than the smallest knife in this kit.

Loving the Kyocera and Forever ceramic knifes more than metal blades though. Super light weight and crazy sharp for years.

just wait for this Sunday's deal for the Global knives set. Looking at the thumbnail its 7 pcs set.
Not sure for the sale price yet though.

  • Is this or the G2 set better?

    • depends on how you use. having both, this works better IMO.

Why call it oriental? Cause of the different shape? But racist no? 😂 Just joking..

  • Whats the best sharpener for global knives ?

    • Minosharp is a pretty good and easy option

      • +1

Can I ask if you use the 2 or 3 stage sharpener?

        • +1

I have the 2 stage sharpener

        • I have a 3 wheel and usually top up the knives with the 2 finer wheels. The 3rd is quite rough.

      • cheers mate ! been looking at getting one but wasn't sure if they were good !

    • Zwilling J.A. Henckels 12" Bob Kramer Double Cut Knife Sharpening Steel - found one off ebay.

Hold handle with the tip facing the kitchen counter, place a kitch cloth underneath the tip and swipe as per a youtube tutorial.

About 12 swipes per side and good as new.

    • Perfect

  • I have used my Global knives from around 15 years ago and like them for most uses.
Not sure if it has changed but they used to be fairly high carbon so the metal could pit fairly easily if you don't look after them, I.E. dry them completly after cleaning etc.

As a happy owner of 2x Wusthof Chef's knives, 1x Santoku, 1x Sandwich knife and 1x Pairing knife, I resist the urge to buy more (even though Globals are great)

…but I can never find a clean knife when I need one, and after seeing a comment in the previous deal that reminded me about $3 Kiwi knives, I topped up on those instead.

  • +1

I have had these for a few years. They are definitely good knives, especially after sharpening them. I do find they go blunt pretty quickly but that could just be my use of the dishwasher

    • Hand washing (and drying straight away) should help a bit

    • +2

Dishwashing your knives is a great betrayal.

  • Anyone have experience with the Oriental knife and the Chef's knife? Does the angular blade make a big difference compared to the chef's knife?

  • +1

They go blunt very quickly and there handle is extra small, your hand gets sore just trying to hold them.

    • They do sharpen up like hell (excellently) but yes, even a pro' who uses a knife with skills to include maximising edge (sharpness) retention will tell you that Globals are notorious for going blunt too quickly.
I like them because they sharpen up very well… I don't because they go blunt (edge 'pitting') even with the best of care IMO.

  • I have the ikasu set and a santoku blade, cleaver, fork and tweezers. Probably use the utility (11cm gsf22) and cleaver least, but good for breaking bones/joints. The fluted santoku is good all-rounder. I have stones but found the minosharp suits me best.

  • We’ve had this set for about 2 years and they’re pretty good. We use them daily and give them a hard time. They do go blunt pretty quick and we do have the minisharp sharpener but we’re too lazy to sharpen them regularly.
It’s a shame they don’t come with a knife block as ours just get thrown in the drawer. Any ideas on a decent knife block? The Global blocks cost more than the knife set?

  • On another topic, would a shun knive much better compared to global in term of retaining sharpness?
