Not sure if available at your stores, but can highly recommend mamaji's sauces

Butter chicken, the Korma and Tandoori are delicious. Not cheap ($10 a jar), but tastes like a restaurant.
used to be at local markets in Melbourne, but now online and in some supermarkets.

We've been trying to find the best laksa flavour and this one wins hands down from Teans pictured in this recipe:

Excellent balance and great with leftover chicken.
We only found it from a Chinese supermarket.

Indian curries? If you’re not making your own, from scratch, I’d say the best packet or jarred variety are Spice Tailor.

Very quick and very tasty, but I generally throw a chopped onion and a teaspoon or two of garlic/ginger at the start, just for a bit of extra flavour.
    When they’re 1/2 price I stock up.

Agree. The ability to tweak the core spices sets this apart from the single jar crap (Pataks…)

      • Yeah, easily better than the pastes and sauces that litter the shelves. Very authentic, and as you say, very tweak-able.

These are my favourite also. Half price at Woolworths starting tomorrow.

Great spot. I’ll be stocking up again……and on a few jars of garlic and ginger too.

        Cheers

      • Only Thai and Indonesian this week. No Indian, unfortunately.

  • Try finding a local Indian grocery store, they would have more authentic imports.

But if you want to make really good curry, the best way is from scratch. And since that's quite daunting if you've never tried before, a good way to get started is to look for instant spice mixes, rather than simmer sauces.
Still in a packet etc, they are basically the same as the sauce, but without tomato and water etc. They still take away the hard part of figuring out what you need to make something that tastes like a curry, but ease you in just enough to feel like you are actually making it yourself.

    • Have you a recommendation?

Shan brand spice packets with garlic and ginger pastes. Way better than anything Pataks does.

        Parampara is pretty good.
Seems it's also available at woolworths, but I've only ever had it in the white packs, from Indian grocers. No idea if there's any difference

Valcom for Thai Red and Green curry

  • I like the Spice Tailor Thai Red Curry. However, my Malaysian friend said it isn’t spicy enough for her.

    • lol just put more chili in?

I like Maesari brand Thai yellow curry (Karee)

Easily the best SE Asian curry pastes. I have friends from that neck of the woods and they won’t use anything else.

Their massaman and red curry are excellent too - we use those regularly as well.

        Yes, especially the massaman. Superb.

I'm not a fan of hot food, but I love the Maesari massaman curry. Discovered this from poking around Whirlpool forums.

  • I enjoy the passage to India, particularly jalfrezi which seems rare to find

not all curries are the same.

indian curry, malaysian curry, indonesian curry, vietnamese curry, japanese curry and thai curry.

you need to understand what curry you like and how are they different in order to buy the right sauce,

Indian curry - Spice Tailor. The pepper, korma and tikka variety are good. This from an Indian background person. Every other brand (specially Pataks) is crap.
