Eden to The Valley Road Trip

Hi Ozb Adventurers!

Small road trip over the next 5-7days from Eden, NSW to Hunter Valley, NSW.

Any recommendations on
Which towns are worth staying overnight?
Where to eat?
What to see/visit?

Young couple in late their 20s.
Hotel or camping is an option.

Also love 4wding if anyone knows of a good detour track.

FYI I searched NPWS campsites on the web last week and most open ones within a few hours of Sydney are packed. I expect the forestry sites will be even more so unless you can find something really off the track.
