    How these compare to the $4 kiwi knives at your local asian grocery store?

    • Kiwi knives are good for a few weeks/ months. Too soft to get re-sharpened.

      These can be sharpened many times.

      • Are you sure kiwi knives can’t be re-sharpened?

        • It's not they can't be re-sharpened, it's just not worth it.

        • Softer steel could be honed back to a stright edge easier, but impossible to retain a super sharp edge.
          Therefore sharpening is not really worth it.

        I have continually resharpened my kiwi knife for almost 10 years. There's about 50% of the original knife left but it still works and cuts marvellously.

          I have both cheap and relatively expensive (Shun & Kasumi) knives. All for different purposes. Cheap knives are great as you don't need to be too careful with it and won't chip as easy as knives with harder steel.

        • Yeah I think I’ll resharpen mine over and over again. Given it only takes a few minutes to do I’m not sure why some people think it’s not worth it.

          • @MuddyClear: Irony is I sharpen my $5 kiwi knife on a $120 stone (it's also for my other knives though haha)

            • @do-ob: Same here. But my Shapton stones hardly wear down at all after 2 years of use, I think they should lasts 10 yrs+ so I can kind of justify the cost.

      • I used a Kiwi knife almost daily for about 5 years, and still use it occasionally. My current Tojiro workhorse is better, but cost 5 times as much.
        I have no idea what you mean by "too soft to get re-sharpened". Kiwi knives are probably average in hardness, and I sharpened mine on a whetstone once every three weeks or so and it's probably lost maybe 1-2 mm in blade width.
