Hi I recently got a robot vacuum, been leaving it on charge the past few days. I wanted to make sure if we are meant to leave it always on charge? Or should we unplug it when it reaches 100%? We use it once a day.

You are meant to keep it on charge. Taking it off charge also means that the robot goes offline.
That said, I use a simple timer to turn off the charger an hour after the robot finishes cleaning and turn it on a couple hours before it is scheduled to start. Might help with battery longevity over trickle charging 24/7.
