[AMA] Ex-Chicken Treat Employee, Ask Me Anything

Hi,

I recently saw someone post an AMA about their workplace so I though I'd answer some questions if anyone had any. I was working at Chicken Treat as BOH for about 5 months until I quit last week due to some personal reasons. Even though I was only working for a short time and at the back, I still know my stuff around service, cleaning, making (gravy, mash etc.) etc. Feel free to ask me if you want to know how we make stuff or what we do around. I will try my best to answer any questions you have. I haven't mentioned the location out of confidentiality.

  • Is it simply garlic salt that is rubbed into the chooks before they're roasted?

      Not rubbed in, it's sprinkled over

    • They actually season the chicken with a blend of some herbs and spices which is place in the cool room and then cooked in the rotisserie.

    • It's like Brodie's (which you have probably never heard about if you're outside south-east Queensland)

    BOH, also known as 3,4-methylenedioxy-β-methoxyphenethylamine, is a drug of the phenethylamine class.

      • We work Back of House doing all the making (gravy, mash, fried chicken), taking out chicken from rotisserie, cleaning floors, bin run and service (helping make orders).

    I really like the chicken rolls, and since I havent got a CT/RR near me I buy the 'On The Menu Chicken Rolls' from the supermarket, which are then microwaved.

    Do the CT/RR rolls also get cooked in the microwave?

      Yes

      Well, warmed in the microwave, not "cooked"

      We take it out from the coolroom and then place it in the microwave for 35 secs.

    Chicken Treat, Red Rooster and Oporto are apparently all owned by the same company.

    Anyone else heard that rumour too?

    • That's not a rumour. Took me 2secs of googling

      In April 2007, Australian Fast Foods sold Red Rooster and Chicken Treat for $180 million to a consortium formed by the management and the venture capital arm of Westpac known as Quadrant Capital.[4]

      In early 2011, QSR Holdings acquired the Western Australian Chooks brand (formerly known as River Rooster), converting said stores into direct-service outlets with no drive-thru service. These stores all carry the newer Chicken Treat branding.

      In June 2011, Archer Capital acquired Quick Service Restaurant Holdings (QSR) from Quadrant Private Equity for an estimated $450 million (including Red Rooster and Oporto).[5][6]

      Yea, all 3 of them are owned by the same parent company - craveable brands.

  • Just a thought, are you sure there is nothing in your old contract with them, that prevent you in exposing your previous employer's trade secret even though you are no longer employed by them now?

      Yeah “trade secrets” like they sprinkle herbs and spices on the chicken before cooking it.

    • Depends who makes them: if the water is hot enough, or if there's enough water
