Any Non-Vinegar Mayo? Is It Safe to Make Own Mayo at Home?

Hi Legends,

I hate vinegar and after a non-vinegar mayo, anyone know where I can buy it? I also want to make my own mayo at home so that I can get rid of vinegar and use lemon juice instead. But I'm not sure if it's safe to do so because I need to use raw egg yolks which I found might contain bacterias.

    I make my own mayo using Sunflower oil, raw egg yolk, lime juice and mustard. I make enough to last 3 days max.

    Forget eggs. Google "aquafaba mayo" and never worry about eating things that come from a chicken's wee-poo-egg-hole (cloaca) again.

    No vinegar!!! What?? That is the part of mayo I love the good tang. I really dislike most of the store bought ones because they are sweet with added sugars/sweeteners.

  • Use aquafaba (chickpea brine) instead of eggs if you are worried about raw eggs. Google a vinegar free recipe - here is one as an example https://healthylittlepeach.com/mayo/#tasty-recipes-19848

    Note: I have never made aquafaba mayo (nor used the example recipe attached) so can't personally comment on how good it tastes, but have read blogs of positive reviews about it. I have only used aquafaba in place of eggs in meringues.

  • Yes, you can create mayo on your own also Whisk the egg yolks in a bowl, then add the mustard and whisk together add some oil to it and whisk for around 3-5 minutes. and keep on whisking until the remaining oil disppears and add some vinegar juice and lemon into it and your mayo sauce is ready.
