I am too in the same boat with wondering what to do with the bonus points.
To answer your question, yes, you are able to redeem points on purchases. (Note I have personally not done this so can't tell from experience). To access that menu, log into AMEX rewards and go to 'Use Points -> Cover Charges with Points' and follow the prompts.
It is at a rate of 1000 reward points = $5 which is the same exchange rate as gift cards (20k points = $100 value at e.g. JB or $880 at BBQ Galore (promo atm))

As above, yes you can. It's what I do with my Essential Amex.
Not sure how often they will do it in the future since amex perks are getting suckier by the day, but in previous years they'd have promotions where the redemption rate was even better (e.g. 1000 points for $7 instead of $5) so you can wait out for that before you redeem.
Oh dang I pulled the trigger already. I hit the spend within a month and was keen to get rid of this thing before it comes a hazard. We are still yet to redeem our travel credit however.
Any other tips or tricks to take advantage of before closing it?
How long does it take to get the bonus points once you hit the spend?
I am not sure. We actually hadn't even hit $3k yet we were only at $2.5k a few weeks in and they must have expected that we were on track to hit it by the end of the month. The points and credit landed in the account a few days ago ( likely end of month statement).
I haven't seen a deal on points for a long time.
You might need to give us more information, like what Amex you have, for example …
