        Work your way up slowly and you will probably find the same sweet-spot as the rest of us cultured swine - 90% is where its at (95% is a bit gah, and 85% is way too weak).

      Lindt is a great chocolate bar, but one should be wary of which Lindt bar you choose if you are also seeking the health benefits of eating chocolate.

      If you buy the 70% or 85% bar, then you are safe. They do not use the dutching process (use of an alkalizing agent to process cocoa) for these two products. However, Lindt uses the dutching process for the 90% bar, so beware. This process unfortunately takes many of the flavonoids out of the chocolate, deleting the antioxidant ability it might have had.

      70% – Chocolate, sugar, cocoa butter, soya lecithin (emulsifier), bourbon vanilla beans.
      78% – Chocolate, cocoa butter, sugar, fat-reduced cocoa powder, milkfat.
      85% – Chocolate, cocoa powder, cocoa butter, demerara sugar, bourbon vanilla beans.
      90% – Chocolate, cocoa butter, cocoa powder processed with alkali, sugar, bourbon vanilla beans.

      • Thank you so much for bringing this to my awareness. I only just did a quick search to verify what you say about the flavonoids.

        I've been eating Lindts 90%+ for years without ever realising the cocao is process with alkali (let alone any chocolate). This is going to change the chocolate I eat lol.

        • Dutch process cocoa or Dutched cocoa[1] is cocoa solids that have been treated with an alkalizing agent to reduce the natural acidity of cocoa, giving it a less bitter taste (and darker colour) compared to "natural cocoa" extracted with the Broma process.[1] It forms the basis for much of modern chocolate, and is used in ice cream, hot chocolate, and baking.

          So, that would be most of chocolate, ice cream, baking…

          It just tells you how many hidden things are in our food. Mine is 90% too… So, now, what to choose…
