I'm trying to buy an Apple Watch series 7, but it seems like whether it's from Apple, JB etc etc, none are available for a month or so. Is that the case across the board? Like have they not even landed here yet?

Thanks - I'm also not clear on whether certain colours will arrive before others. Someone somewhere here posted about the wait being longer for the Midnight colour.
Popular sizes and colours do indeed have different delivery times. It depends on demand and supply.
Hmm - I wonder whether the Apple Store estimates are accurate or just speculative and not checking stock availability.
@Ozgrail: Apple Store estimates are always accurate as worst case. Most of the time you'll receive the item sooner.
Just wait till xmas and you might get it with some discounts and maybe more availability
I ordered one from Apple online and it came in two weeks ( from China ). No luck getting the model I wanted inthe store but they had some stock
You're best bet is to check the Apple website throughout the day, the stock levels will update as stores get it in but the allocation and restock times are pretty random.
Currently I think the 41mm Midnights are available in a few places. The 45mm are a bit harder to find but last Wednesday I did find stock at Bondi and Chatswood and was able to collect it the following day. In my case the Apple Store app bugged out and didn't use my Apple credit balance but charged the full amount to my CC, so I've been trying to find another store with stock so I can return my current one. I did manage to get another order in this morning around 8:45am, both the Bondi and George St stores had them in stock.
So if you check the store a few times throughout the day, you'll almost definitely find them in stock within a week.
In my case it was around 2pm on Wednesday last week and then 8:45am this morning. This was for the 45mm Nike Edition in Midnight with the black sport band which seems to the SKU that gets restocked most often.
i picked 45MM blue with Abyss Blue/Moss Green sports loop on 1st day from penrith returned after 10 days
and then picked Nike starlight 45MM with Black Nike band on 28 Oct 21 from Caste towers.
just keep looking ur closest store everyday.
If you can pick up from an Apple Store, check every morning around 7 or 8am. Even though shipped orders may be several weeks away, the physical retail stores are regularly restocked.
There's only set combinations of watch and band though, if the one you want is a set combo you might be able to snag one after a couple days' of checking. If the watch and band you want isn't a set combo you'll probably have to order for delivery and wait it out.
I was in same boat and it shows all my local JB/OW/HN stores with 3-4 weeks shipping time,
yesterday went to JB in Pacific Werribee and they had stock so got one.
May be call your local store and see if they have stock and you can reserve or order over the phone for pickup
The Series 7 is indeed delayed. It was even announced with no release date which is very unusual. Expect early to mid December for orders now.
