Is there any way I can look back and see what specific items were purchased? I can see my activity status and total $ spend but that's all. Don't have the receipt unfortunately

There isn’t a way for you to see a digital copy of the receipt through the Flybuys website or app.
However, I believe a Flybuys customer service person is able to obtain a copy of that receipt (or at least see the receipt number and give it to you), so you’d need to contact Flybuys directly and see if they can help you.
