I pre-ordered Gran Turismo 7 PS5 on Amazon last week and cancelled it 2 days ago, however today I got an email with the pre-order Bonus code.
As the order was cancelled, if I redeem the code would I get banned from PSN?

i assume the cost would fall to amazon who would just ship out a replacement or send a new code, i doubt they'd bother following up with sony as they seem pretty lenient on returns and stuff like that, at least if you don't return often. probably won't get banned but i could be wrong

Free returns on Prime if sold by Amazon. You even get refunded soon as Aus Post scan it sometimes.
Free returns off Prime as well (depending on the reason). But you usually won't get refunded as soon as Auspost scan it if you aren't a Prime member.

I think you should be OK using that code. Like other said its probably a little unethical, but i don;t think it costs amazon anything for the pre-order codes.
I pre ordered the 25th anniversery edition a month prior to release and it still has not shipped. I have been told I will not get the pre-order code either as they can;t send them now as its too late. So much for the pre-order, i really want that castrol Supra from the early GT games..
