I am flying with thai airways. total flight time is approximately 17hrs with one stop. I called and email thai airways about this but haven't heard back from them. So my question is can I use a fabric bag as cabin luggage or it has to be those small cabin luggage bags on wheels? Also, I want to take an air fryer as checked in luggage. is that possible?

You can take an airfryer as checked luggage, but whether it'll remain damage-free is another story …
I only reccomend airfryers on shorter trips - with such a long flight, whatever is in your airfryer would be well overdone by the time you land.
you can use any bag as your carry on bag
I took a plastic shopping bag as one of my carry-on luggage one time.
As long as your bag fit the maximum allowable dimension for carry-on airlines staff won't bat an eyelid. I figure the airfryer would fit 2 of the 3 dimensions so if you can manage to get its depth to fit (compactor lol) you probably can carry it along.
Length is 14.5 inches and width is 11 inches.
Impressive.

30Kg sounds like the Checked Bag limit. What is the carry-on bag limit?
I have rocked a Filson canvas duffle around the world as cabin baggage, and never had a single issue.
They allow handbags so no reason why a fabric bag would be an issue.
