Hornwort is a great plant to help clean up any excess nutrients from your aquarium water (This helps with Algae and keeping your fish healthy). Since it is a floating plant, it gets all its nutrients from the water-column, and is great paired with fish or even in ponds.
The only requirement is a fairly strong light, but as long as you have a dedicated light or sunlight that should be enough.

Out of all our plants, its one of the tougher ones, but they still might eat it. I couldn't say for sure either way.

It would be eating the nutrients that algae would otherwise be taking, which might be what you are seeing.
I didnt know these plants could do this. Good to know as I have two of them in my freshwater tank.
All plants do to some extent, but these do not have roots, so get their nutrients from the water-column, which is the same place algae does hence they compete for food.
