I just realised I have both expiring flight credit next month for both Qantas and Jetstar. Am I able to use the credit to book a flight which offers 'refund/credit/changes' and then just cancel the booking to extend the credit?

Jetstar yes, with the appropriate bundle. Qantas maybe. Qantas fares are complex and usually have a change or cancel fee.
